Elizabeth is a wonerfully personable woman who likes to cook healthy, AND to convince her sister to try healthier sweets! She reached out to us as a fan of our Kakosi products with some questions, and ended up on the phone with her for quite some time. She told me about some of her deserts, and this one sounded yummy, so I sent her a box of Kakosi, and she sent us this amazing recipe of hers! Amazing texture, not too sweet, and the flavors are very well balanced. A perfect finish to your healthy dinner!

Ingredients
For C3 Pudding
  • 2 Tbsp Kakosi Organic Cacao Powder
  • 1/4 cup Coconut Sugar
  • 1 can Full-Fat Coconut Milk
  • 1 tsp vanilla extract
  • 1/3 cup Chia Seeds
For Topping/Garnish
  • 1 can Full-Fat Coconut Milk- refridgerated
  • 1 Tbsp Kakosi Organic Cacao Nibs

For C3 Pudding
  • 2 Tbsp Kakosi Organic Cacao Powder
  • 1/4 cup Coconut Sugar
  • 1 can Full-Fat Coconut Milk
  • 1 tsp vanilla extract
  • 1/3 cup Chia Seeds
For Topping/Garnish
  • 1 can Full-Fat Coconut Milk- refridgerated
  • 1 Tbsp Kakosi Organic Cacao Nibs
Instructions
  1. In a medium glass bowl, combine the coconut sugar and Kakosi Organic Cacao Powder.
  2. Whisk in all contents of the coconut milk from the can, and the vanilla, until smooth.
  3. Stir in the chia seeds, and set aside for 20 minutes, until the chia seeds are swollen. If you prefer your C3 pudding chilled, you may place it in the refrigerator while the chia seeds swell.
  4. Open second can of coconut milk, and scoop just the solid portion into a bowl. Using a fork, stir and whip the coconut solids until the consistency of whipped cream
  5. spoon the pudding into serving bowls, top with the whipped coconut cream, and sprinkle with Kakosi Organic Cacao Nibs
  6. Enjoy!
