VEGAN 2-Minute Mousse
This isn’t vegan… no way.  Oh yes it is!  And so easy.  And so delicious.  And yes, it’s healthy too.

Ingredients
  • 13.5oz bag Kakosi 2-Minute MousseOrganic, 4 – 5 serving size
  • 113.5oz can Coconut Cream
  • 1/2tsp Guar GumAnthony’s has organic
Instructions
  1. Empty your can of coconut cream into a mixing bowl, inluding all liquid and settled solids
  2. Add 1/2 tsp Guar Gum, and stir into the coconut cream
  3. Add the Kakosi 2-Minute Mousse, and beat on high for 2 to 3 minutes.
  4. Pour mixture into a a smaller bowl with a lid, and refridgerate for 2 hours or more. Your Vegan Mousse will firm up in the fridge.
  5. Enjoy! Garnish with raspberries, a sprinkle of cinnamon, or some shaved dark chocolate. Or use in cake layers or as frosting.

You can keep all these ingredients in your cupboards just in case you need a last minute desert, and your guests will be glad you did!

The 2-Minute Mousse and Coconut Cream are thickened with Guar Gum.  Guar Gum is a ground up seed- a single ingredient that helps bind and smooth foods.  It is often found in ice cream and other deserts.  Bob’s Red Mill and Anthony’s both have this product available, but you may have to go to the internet since many stores don’t keep it in stock.
